This nutty gnocchi recipe is one of my all-time favorites! With the toasty pine nuts complementing the fried garlic and onion and paired with crispy gnocchi, you head right into flavor town here!

Although, by no means is this a healthy recipe. With the amount of butter I use here it surely is not recommended to make this often haha. Don’t come for me, but if you want a healthy recipe this isn’t it! Normally, I make this dish once in a while as I try not to minimize my consumption of oil and butter. In addition, pine nuts come with a hefty price tag. Which is seriously unfortunate as they are absolutely delicious to cook with.

The Nutty Gnocchi Recipe!

I assure you, once you make this recipe, it will become one of your favorites! This delectable dish is addicting! Indeed, every ingredient pairs perfectly together. With a quick prep and cook time, it doesn’t take much effort to make either. I don’t want to write a novel here so let’s just get into the nutty gnocchi recipe, enjoy!

Serves: 3-4 Prep Time: 10 minutes Cook Time: 25 minutes

Ingredients:

100 g Shiitake Mushrooms*, sliced thin

1/2 White Onion, finely diced

3 Medium Garlic Cloves, minced

50 g Pine Nuts

142 g (5oz) Baby Spinach

500 g Gnocchi

3 tbsp (Vegan) Butter*

1-2 tsp Salt

Garnish:

(Vegan) Parmesan or Other (Vegan) Shredded Cheese

Hemp Hearts

Dash of Lemon Juice

*I know the dangers of using non-stick cookware and am working towards using safer alternatives 😉

Directions:

  • Fill a pot with boiling water, for the gnocchi, and place on stove on high heat.
  • Pre heat a large frying pan over med-low heat & add 2 tbsp of (vegan) butter followed by the onion. Sauté until softened, about 3-4 minutes stirring often.
  • Add mushrooms to pan with some salt and fry another 3-4 minutes.
  • Next, add pine nuts to the pan and cook, stirring often, until pine nuts turn lightly brown.
  • Then add garlic to the pan and fry about one minute.
  • Cook gnocchi according to package directions. Once strained, add to frying pan to lightly fry and crisp up the gnocchi. This is my preference, but prepare the gnocchi however you prefer.
  • When lightly crisped, add the spinach and cook until just wilted. At this stage you may need to add more butter as the spinach will soak it right up!
  • Salt to taste.
  • Add whatever garnish you prefer. I like a dash of lemon juice, hemp hearts and parmesan cheese, or whatever (vegan) cheese I have on hand.

Notes:

  • Shiitake mushrooms are the best to use in the recipe, if you can find them. In this case, I couldn’t find them in any grocery store 🙁 But, they crisp up the best so if you can, use them here.
  • The amount of butter you will use will vary, use your judgement.
